Lead header in layout

How do I display the added field in the lead header in the layout because I created a new field to identify the company since I don't always have the person's name but it always displays the phone number or email in the header?

You can use a Workflow, which will fill the First Name field with a value from your field, if it was not specified during creation:

is it possible to use a created field instead of first name in the workflow?

Is it the header you are referring to is the "Name" field of the Lead entity. if yes, you can write a formula to concatenate name with any of the other fields you want to display on the header
