Ever since the most recent upgrades there has been a display error of the Character "&" showing as "&" in my system - so I went to your test demo site and it is doing the same thing.

It's a known issue. Will be fixed in the next release.If you find EspoCRM good, we would greatly appreciate if you could give the project a star on GitHub. We believe our work truly deserves more recognition. Thanks.
