Change Bottom Panels

How can I change the field Stage, in Accounts bottom field Account - Opportunities for Probability ?

You can't go directly to the Bottom Panels, but you can go directly to the Detail (Small) layout from the Bottom Panels, and make changes there.

I mean, Is it possible to replace “Stage” with “Probability”? in the bottom fields of Accounts - Account - Opportunities

If you mean adding, deleting, or moving fields, then in your case this is done in Administration > Entity Manager > Opportunity > Layouts > List (for Account).
