how can i change the reference field for the title display.

Are you talking about a label of the link type field?
If so you can change it in these ways:
1. Administration -> Entity Manager -> Your entity -> Fields -> Your reference field -> Label.
2. Administration -> Label Manager.

There are the following fields accountName = company name name = salutation, first name, last name
First name Surname

I created this like this: accontName = company name first name and last name and the field titl = position in the company

first name and surname = first contact person

If I now fill in all the fields, the system shows me the name from the name fields in the title at the top.
This is then treated in advance when creating an appointment.
If I leave the name fields empty and have only entered the company name, the company name is displayed and the appointment creation also displayed.

I would like the company name to always be given priority.

Well, it seems it needs some code customization. I'll move this topic to the Developer Help branch. Hope somebody will help you to make it work.
