Process Flowchart Day of Week

I'd like to use the day of the week in a Process Flowchart. For example, if anyone gets added this week with a certain status (like chat), I would like it to email them on the upcoming Monday to say "thanks for chatting last week" ... but I don't know how to say "if not Monday, wait" in the Process Flowchart. Can it do that, and if so, how?
