Email-To-Case field mapping

Hi everyone
So recently we started using the Email-To-Case resource and it's been pretty awesome.

I noticed that when the email comes with the header info, it maps only with the email field. Is there a way to map other fields?

For example, I would like to map the account with another field rather then the email field.
