Update field on link click

Hello is it possible to update a field if a link is clicked in an email? Example would be to set up a workflow that alerts a user to update a field or they can click [this link or button] to update it from the email.

I'm thinking it would be a custom php script with a variable in the url that gets passed from the account/contact.
