Is there a way to list accounts or contacts by last date of contact? We'd like to have a record of the date we called or emailed someone and then list/sort by that field. Thanks.

You mean order by last meeting/call/email date? No such ability. But it's something we may will add in future, -
What would be ideal would be the ability to sort accounts or contacts by the date modified or to be able to search for all contacts or accounts that haven't been modified since a given date.Comment

You can achieve this out-of-the-box.
Administration > Layout Manager > Accounts > Search Filters
Add Modified At field.Comment

This is a extract from Hubspot. I appreciate this can be achieved with formulas but I think these are core standard metrics.

Last Activity Date – The last time a note, call, email, meeting, or task was logged for a contact. This is set automatically by HubSpot based on user actions in the contact record. Last Activity Date updates when an activity isentered into HubSpot or when an existing activity on the record is edited.
Last Contacted – The last time a call, email, or meeting was logged for a contact. This is set automatically by HubSpot based on user actions in the contact record. Last Contacted is based on when the event actually took place.
Please note: These contact properties will only update when one of the activities listed above occurs within the HubSpot CRM.
For example:
Example 1: If you log a call that took place yesterday, the Last Activity Date will point to now, and Last Contacted will be set to yesterday.
Example 2: If you schedule a meeting for tomorrow, Last Activity Date will point to now, but Last Contacted will not be updated until the meeting takes place, at which point Last Contacted will take on the timestamp of the meeting.
Another key difference between these two contact properties is that the Last Contacted contact property would only update for calls, emails, or meetings and not for a note or task.
