I'm trying to create filter to automate my Email "Parent" field, need to know how to add more Entity in this Parent field of Email Filter. Not sure how to.

Interesting, you can open it using the URL and it will still work. There is no "field" hyperlinks in the Field manager.
In my case it would be to use:
https://demo.espocrm.com/?lang=en_US...pe=EmailFilter
Editing that doesn't seem to work for me though, reading this field again it seem like it is a different type of "Parent" field, so it doesn't suite the purpose I'm after. I'm trying to auto assign Parent to Case/Account/Contact depend on email content. Actually the "EmailFilter" is protected against editing from the UI.
Such entities we have to be careful with editing as they have their own complicated functions and some changes may stop them from working
I even think that yuri will disable the link I shared in the next versions
