How to keep currency format in email template?

I found that currency format is lost in email template. For example an opportunity amount 2,366.78 becomes 2366.78 and 2,366.00 becomes 2366. How can I keep the format in email template?

Also can I set a default value of zero for currency field? I think it is better than leave it empty.
