How to adjust which fields are being displayed in quote item's quick add?

I can't find where to change the fields displayed in this 'quick add' table

Can't this be edited in: Administration -> Layout Manager -> <MODULE> -> List (for list view) and Detail Small (for quick add).

It's not supported. You can only change the layout of view item edit view of mmandell stated.

But where is the logic for quote items defined? Is it possible to change it? For example I don't want my discount amount to be taken away from my grand total amount
