In the demo version, Contacts have a “Birthdate” field, but I installed it on my own server and this field is missing in Contacts. How can I enable it?

It's a custom Date field. You can create it: Administration > Entity Manager > Contacts > Fields > Create. Select the 'Date' type. After that, add it to the Detail layout.

If you don't know the year of birth, you can enter 1904. That was a leap year so every day works, including February 29th. Then you can get today's birthdays with a little formula magic.
