Adjustment of export fields (eg. Excel)

Hello,
how can I prevent several fields are not exported if selected export (eg. Excel) "all fields".

And

How can I remove certain fields from the export (eg. Excel) selection or define specific for export selection?

For example for both:

• Entity Account
  • shippingAddress
  • sicCode
  • and so on
