Override css or create a new theme?

I'm new to EspoCRM, I've played with SuiteCRM some time ago. Congratulations for EspoCRM the design is great super user friendly.

My question is about changing the colors of EspoCRM, what should I do to achieve this.

Override the css or create a new theme?

Better to create own theme. Look for files of any existing theme (sakura or violet) for example.
