Conflicting Create - Edit in Roles

Why are edit and create overwriting each other. I want a user to create a New Applicant ('New Applicant' is my custom entity), but can only edit a boolean field called 'Approved' in the ones that have been created (not the name, email, etc...).

Create: Yes - Read: Team - Edit: Team - Delete: No & In the field rights of 'New Applicant', I set Name & Email fields to Read: Yes, Edit: No

I cannot edit the name & email of existing New Applicants (good), but when I click Create New Applicant I cannot create the name and email either (bad)
