Entity Relationships

Can anybody point me to some documentation that explains how the entity links work through the UI ? I tried to link contacts to a custom entity to form a one to many relationship and I couldn't find anything else that allows me to reference data across tables after I'd specified the link in the admin page below ?

Administration » Entity Manager » Entity » Relationships
